"Equity" on an offer letter is a word, not a number. It can mean a real stake in something you would want to own a piece of, or it can mean a line item that exists to make the cash component look better than it is.
The difference lives in the mechanics, and almost nobody publishes them. Ask three questions and most companies go quiet. What happens to my vested options if I leave? Do grants refresh, or is the signing grant the whole story? Has anyone here ever turned this into money?
Linear answers all three in public: early exercise in the US, ten years to exercise instead of ninety days, refreshers as you go, and a tender offer that let current and former teammates sell vested options at the same price the investors paid. That is the ceiling. Most companies on this page do not reach it. Every one of them publishes something you can go check.
